docs(wiki): use a minor tag that will exist as the example

The image tag tables showed mauriceboe/trek:4.3 as the minor tag example,
"published for releases after 4.3.3". The next release is 5.0.0, so no
4.3 tag will ever be pushed, and a self-hoster copying the example into
compose gets "manifest unknown". The example is now 5.0, and the row says
4.x releases have no minor tag and are pinned by major or full version.

Replace `mauriceboe/trek:latest` in the run command with your chosen tag to pin to a major version, a minor version or an exact release. Test builds of the next version are tagged `latest-pre`; see [Updating](Updating#image-tags).
